Perfect Pre-prepped Chicken



Want to know my secret?!?? 

I make the easiest chicken ever!!!  It makes life so much easier when you are busy and throwing meals together!!!  It's the PERFECT Pre-prepped Chicken!!

Want to know what's in it!!?

3 ingredients.  Yep...3!!

I even made a video about it with no make up from my messy kitchen..cause that's how I roll!!!

Awesome right?!  Prep chicken once...use it all week!!! #awesome

Here's an example!!!

The other night I was craving my moms "Aroz con Pollo"
(That's chicken and rice in Spanish) 

I Didn't have time to make her "original recipe" so.....I used my perfect pre prepped chicken and created a faster, easier, healthier version!!

Who would have thought of that?!

Introducing 
Creamy Chicken and Rice 
A la RockitMOMfitness 

Ingredients :
2 pouches seeds of Change Organic Rice and Quinoa
2 cups Organic Chicken Broth
1 medium yellow onion -chopped
1 cup Organic baby carrots chopped
2 cup pre prepped chicken -diced
3/4 cup plain greek yogurt 
1 tbsp Butter

Intructions :
Sauté onions and carrots in butter untill carrots are "semi soft"

Add in rice, broth, and chicken 

Simmer 5-7 minutes on medium heat 

Turn off heat and allow to cool for 5 minutes.

Stir in greek yogurt! (If you stir it in when its too hot it gets clumpy!) 

Sprinkle with parsley flakes (super fancy!!) and Serve immediately!!




Now the real test is will the KIDS eat it!!??

Well...his bowl was empty enough to put on his head!!! My 5 yr old deems this recipe #kidapproved!! 



Sigh. Happy faces..happy tummies...happy mommy!!

How to get up early....And get your workout in!!!





As a mom of 4 getting a workout in can be a bit of a circus!!!! You know what I mean...kid hanging on your leg song and dance juggling act!??  Did you see my CIZE video they other day!!!?  Exactly! But Sometimes you just gotta fit it in anywhere you can!! 

Yet, I have learned (after much experience) that I am a much happier mom if I get up and get in my workout early. It saves my sanity ...and amplifies my patience! #truth

Yes...sometimes getting up early means I don't get a ton of sleep.  Sure there are days I miss my early wake up call if I need to catch up...usually after traveling, or being sick, or multiple nights with kids up all night.  
But honestly...after becoming a mom of 4...endless nights of lost sleep... I realzed that even on night the kids don't get up...I WORRY about my kids in my sleep!!! 

It's just never going to be perfect!!!! 
I'm never going to be perfectly rested....ever. 

So here are some of the things I have learned do to that help ME just get up ..and get it done!!!!

1. Alarm!!!! Set it...far far away from you!!!

Set your alarm .....and put it across the room!!! I mean waaaaay out of reach of the sleepy snooze snatch.  (You know what I'm talking about!!  That arm that flails around in the dark and smacks the phone till it shuts up!!)
   Tip:  If you have to get OUT of bed to turn it off...you've already greatly increased your chances of not pressing snooze!! Bonus!

I have 2 alarms depending on what workout I have planned. If I'm running and lifting ...I get up earlier.  If I'm just doing a shorter workout like INSANITY max : 30... I sleep in....a whole half hour!!!

The other alarms are to wake my kids up for school!!....which also gives me a good visual reminder that this is my time for me!! So the clock is ticking. No time to waste!!! Get up and GO!!!!

2. Headphones in.....Brain on!!!




Once that alarm goes off ...my brain is awake. I remind myself that even if I try to go back to sleep....it's not the same kind of deep sleep anyway.  Right?!! Sleeping when you know your snooze is going off in T-7 minutes just makes me anticipate the alarm.  So..just get up!  
 
As soon as I'm up I put in my headphones and listen to a personal development book!!  It focuses my BRAIN and my ATTITUDE!! (Because attitude matters..at least that's what I preach to my kids!! 😜)

You can play your favorite music, audiobook or podcast.  Even YouTube has tons of motivational videos!!!! 
Learn to start your day by growing your brain...even if your body is slow to get moving!!  

3. Zip it!!!
I hate being cold!!!!  So I always dress in layers!!!  Get up and get dressed!!!!!  Layers warm you up so you don't get the urge to crawl back into your warm bed!!!

This almost always includes a hat!!! You loose most your heat from your head!!! Just a heads up!!  So zip up, hat on..and you'll warm up faster!

4. Pick up you QUICK me Up!!!! 


I never feel great working out hard on an empty stomach!!!  So find something the gives you a quick boost!!!

For me it's usually E&E (energy and endurance) mixed in my water and 1/2 a banana for a boost of vitamins, natural sugar and yes...caffeine #yawn!!!
  Other people love to start their day with a cup of cofee!!!  Find what works for you!!! 

Make it a habit!!  Your brain and your body will quickly get accustomed to your ritual signals that mean "GO" 

5. Find a workout you love!!!! 💜💜💜



 I don't care what it is....there IS a workout out there that you can enjoy!!!  
And if you LOVE it...you're more likely to get up and DO IT!! 

Maybe it's just walking!!! Walk for 10 minutes before you get into more intense cardio or start weight training. Starting with what you LOVE first will get you moving and kickstart your fitness routine. 

For me personally..I love to lift.  So on dark Oregon mornings...I LIFTHEAVY with Body beast then add in my cardio when the sun comes up.  

The trick is finding something you look FORWARD to!!!  
Do you love to Dance? Lift Weights?? Go Running?!? 

There is something you can love ....and call it a workout!!!! I call it your "soul mate workout" 

Need help finding your "soul mate workout" ?!!!  Let me know!!!.... I've pretty much tried them ALL!!

6. Walk Each Step in Gratitude! 

I've been working hard on this one!!!  What if every step we took we repeated in our mind something we were grateful for!!  
Hard?!?  Maybe at first.  But the more you practice..the more things you start to find !!  Like the little freckles accross your little boys nose.... Or the way the dew shimmers on the grass in the early morning.

Gratitude in each step...for everything good, and beautiful in your life, will set you in the mindset to have a great day...everyday.  

It doesn't just motivate you to get your workout in...but helps you see that the ability you HAVE to workout, to be healthy, to be ALIVE is a gift!!!

Walk every step by repeating in your mind something to be grateful for...and your life becomes so FULL of joy...that you can't wait to get upbraid GO!!!

Get Ready to DANCE!!

I teased this a little bit in my last post so here is a little more info about the new Shaun T program coming out this summer. I am SOOOOOOO excited for it!! Maybe this white girl will even be able to learn a move or two! (And c'mon,.. who doesn't love a little more Shaun T??)

The new program is called CIZE™ and it is a dance workout that looks like it is going to be so much FUN!! And that is really what I think exercise should be: FUN!!

Here is the description from Beachbody:

How to STAY Motivated

Happy Monday everyone!! I hope you had a great weekend. Jeff and I just got back from Cancun and had an AMAZING time there. It was so much fun catching up with friends and learning more about what Beachbody has on the horizon (don't worry, I'll share much more about that soon. It's fantastic!!).

Not sure how to even put the last week days into words. Jeff and I went to Cancun on our honeymoon almost 13 years ago!! This trip came after a lot of life experiences... 4 kids... and lots of hard work. 

This trip was pretty incredible. Sure.. it's nice it was paid for (thank you Beachbody) ...but it's our time together we spent reflecting on what we've learned the last 13 years that made it so amazing. (Ok I feel old!!
)


The parties were fun...Seeing beachbody friends was really fun.... But just doing a whole lot of nothin' together was the best part!! I don't know about you but when I get home from vacation it can take me a bit to get back into the swing of things. This has helped me reflect a bit about staying motivated and how important it is to keep working on your daily life that coincides with reaching your BIG goals.

As I mentioned before, you aren't going to reach all of your goals in a single step, but you CAN DO IT!! So how do you stay motivated?? I'm glad you asked!! The next video in my 'Goal Diggers' series is about what I've learned about staying motivated, even with all the distractions of life swirling around. Enjoy!!

Moments Matter

I didn't want a dog. I have 4 kids...they make plenty of messes. But the kids have begged for YEARS!! So sure enough...we got a "Daisy the Doodledog".....
I had no idea how to train a puppy...didn't want to spend patience doing it...but of course...Ya have to. My daughter took on most the responsibility. She loves that dog and the dog loves her back. Daisy sleeps next to (or sometimes in) Her bed. But that also means it has been Caitlyn's job to take the dog out each morning. Sometimes it's as early at 6. 


I am always up....and it's often still dark, rainy, and cold. I'd do it for her...so she could go back to sleep...but Daisy won't go out without her BFF.

So we've made a morning ritual of it. Caitlyn and I sit under the massive Pine tree that shelters us from the rain...wrap ourselves in a blanket..and watch that crazy dog run amuck! We giggle. We sit. And we talk. We watch the mist swirl around the trees.
*
It's 5 ...maybe 10 minutes of my day. In the fresh air..snuggled with my daughter ...who is growing up all too fast.
*
Someday I'm sure the dog will be trained ....and will go out alone. Maybe these moments will end. Maybe my daughter won't remember them....but I will.
*
Moments matter. 
Being her mom matters. 
*
And I guess I have the dog to thank for it. ‪#‎godblessourcrazydaisydog‬‪#‎momentsmatter‬

Health is Wealth

Have you come down from your Easter sugar buzz yet?? I may or may not have eaten one too many chocolate eggs over the past week. Spring Cleaning: Body, Mind & Spirit

ITS  SPRING!!!  Are you feeling READY for a FRESH START??

If there is one thing I have learned on my FITNESS JOURNEY…it's that to have TRUE SUCCESS you have to a have BALANCE!  You cant JUST workout…you have to EAT well.  And even if you take care of your BODY….you wont feel FULFILLED without NOURISHING your SOUL.  

Are you READY  for SPRING CLEANING>>  MIND, BODY, SPIRIT??

Here are MY TOP 5 TIPS to SPRING into a FRESH NEW START!

1.  PUT YOUR BEST FRIDGE FORWARD!!
START by taking a good hard look at your fridge!!!  Throw out all the processed food you can find and FILL IT with FRESH HEALTHY FOODS!!!  Not only are FRESH FOODS BEAUTIFUL  but you CANT have a FRESH START stuck in your OLD EATING HABITS. 

This goes for your PANTRY too!!!  Throw out sugar cereal and replace it with oatmeal.  Throw out white bread and bagels and fill it with WHOLE grain bread and English muffins. 

2. Life is better with a BOWL OF CHERRIES!!!   TRY IT!!!   Instead of buying fresh flowers to brighten your mood  TRY FRUIT!!!  Buy a CUTE fruit basket and FILL it with FRESH FRUIT.  LEAVE IT OUT where you can see it!!  It wont just help you EAT better…but it will brighten your MOOD to look at it everyday.   Make a HABIT of ALWAYS having a FULL fruit basket

3.  Put some SPRING in your STEP.  Spring Fever is a REAL THING!!  We’ve been COOOPED up all winter and our BODIES NEED to MOVE!!  TRY SOMETHING NEW with your fitness routine.  The excitement of something NEW is motivating.  Go to a new class, walk a different route….GET OUT of your exercise box and  DO something FUN!!  SKIP !!  Swing on the swings between laps at the park, go SWIMMING at the local pool.     Just GET MOVING!!

4.  Grow you MIND!!  We feed our bodies….but we often forget to CULTIVATE OUR MINDS.   Take 5 minutes each morning to meditate and count your blessings.  Listen to an audio book while you drive to and from work or fold laundry at home.   There are thousands of free audiobooks on You-tube!!!   Turn one on while you make dinner or even when you work out!!   My favorite book right now is “The Power” by Rhonda Byrne.  It has taught me to walk each step with gratitude and love.  When we fill our minds with goof positive things……it changes our entire outlook on how we see everything. 

Choose a book on a topic YOU are interested…and find a few minutes each day to give yourself the gift of learning something NEW!!

5.  Wake up and Smell the Roses!!  Spring is FULL of new life and your SPIRIT will be lifted the more you find time to experience it.   GET OUTSIDE everyday.  Get up and watch the sunrise and listen to the birds….or make an effort to go out each night and just SIT and watch the sun go Down.   Take a blanket and eat your lunch out on the lawn or bench outside your office…Just SIT.  Close your eyes and just let the sun warm your face for a few minutes.  Or, if you are a night owl….before you go to bed each night go out and take 10 minutes to look at the moon and the stars.   A little bit of nature goes a long way in raising your level of happiness.  Spring is SO BEAUTIFUL…take time to experience it!!

Fast Food!!!

Ooooh it was a long day!!!  I was reeeeeally tempted to just pick up pizza!!! And I DO get pizza sometimes!!! 

But tonight I relied on my other "fast food"

Having meals you can prep in flash saves you money, stress, and lots of calories!!!!

This is hands down the fastest meal around!!!

Best part...my kids will make it disappear just as fast!!

3 ingredients!!! (No joke!!)

1. Jacks organic fresh salsa 
2. 1 can organic pinto beans
3. 1 pouch Seeds of change rice & quinoa

Throw it all in a pan!
Warm it for 5 minutes!!


Dinner!!

You can add other things you have on hand like
-chicken (diced)
-onions
-shredded cheese
-jalapeños 


Top with
-greek yogurt (or sour cream)
-guacamole or avocado (I use organic wholly guacamole from Costco)

*yes my kids eat it with chips!!!  Because they eat it ALL!!!  

It's not about perfect ....it's about healthy balance that maintains SANITY!!

Motivation Monday: Daily Action Steps

Happy Monday everyone!! I hope you had a great Easter weekend with friends and family. I love Easter because it gives me a chance to reflect on my faith and think about new beginnings. As I've thought about the last two years of my journey as a Beachbody Coach and what my little team has become one of the things that stands out most are the small steps I've taken everyday to getting closer to my DREAM LIFE. There is still so much I want to do and become and memories to make with my little family, but that first step I took to become a Coach really has changed my life and I'm grateful for it.

Last week I posted about about what I've learned about how to break down being balanced and happy in your daily life that coincides with making BIG goals. It sounds a bit daunting but I'm here to tell you that you CAN DO IT!! 

You aren't going to reach all of your goals in one single step. That's just not how it works (believe me, I've tried!!).  The next video in my 'Goal Diggers' series is about taking daily action steps to move toward your BIG goals. Hope you enjoy it!!

Happy Easter, Everyone!


One of the reasons we wanted land...was to have lots of family and friends over and have room for lots of fun and festivities!!! Jeff was excited to hide as many eggs as possible in the forest....he had some brother-in laws to help out. It was a pretty fun free for all forest eggstravagsnza!!! We even had a visit from the "Easter-buddy" (aka dog named Buddy in ears ) 14 kids,9 adults, waaaaay to much food and candy!!! Lots of fun!! Happy to report my new Easter present (to myself ) kept my feet warm and dry!!! #purplebootsforthewin!!!  Our 1st Annual Reber Ranch Easter Egg-stravaganza was a success!! .....and it didn't even rain. Which is an Oregon Miracle!!!

Good Friday Thought: Embrace the Hill

I ran 10 very hilly miles yesterday. Right now I'm jumping 2 miles a week in my long runs...it's a mental push each week of training. I didn't really want to run 10 today. But when it's on the schedule...it's gotta happen.

All week my  heart has been wrapped up in thoughts of another hill. The hill leading to Calvary. The hill ..up which my Savior carried the cross He would be nailed to. For no fault of His own. After being up all night the previous night suffering for ME. After being whipped, mocked, spit on. He climbed the Hill to Calvary anyway.

I ran hills for Him today. When I was tired I wrapped my heart around thoughts of Him. I embraced the hills..because I know in my life the only reason I have conquered anything of importance is because He helped me.
*
I had a distinct thought today...why is it that we are so afraid to talk about our struggles!?? The Hills in our life we've climbed!?!!
*
We struggle, sweat, cry and Claw our way to the top....and we feel accomplished!!! We stand on top the mountain with JOY!! But yet we don't always share the struggle with others?!!
*
Why!??
*
because if we tell someone about it...and they discount it. It makes us feel like the struggle wasn't wort it.
*
Have you ever been judged for your struggles?!! Have you ever wanted to desperately share your journey but felt inhibited??
*
Why do we do that?!! Why do we crucify each-other for being imperfect and human??
*
In general I want to try harder to never ever judge. You have no idea what hill people are climbing. Everyone has a heart wrenching story. Everyone suffers... And on the flip side...everyone GROWS!!! We can learn from each others struggles!!!
*
Let's climb the hill together. Let's share our struggles and help shoulder the load in love.
*
Let's embrace the hills for the strength they give us. 

*
Let's remember that Christ went before us....so we never have to run the hills alone.
*
I'm telling you. Jesus is a runner 
Try it out. Go Run some hills today. Pray your heart out. He's always right beside you. He already shed His blood, sweat, and tears for you. You can stand to sweat and struggle a little!!

Run the Hills with Him. For Him. Because of Him.

And you will conquer them.

Ditching the Diploma and Excelling as a Team Beachbody Coach

Today's Transformation Thursday story is about a Coach that didn't just change their health and fitness with Beachbody but changed his family's financial situation as well with his at-home Beachbody business. This is one of the greatest blessings that Beachbody has been to me; I get to be home with my kids and enjoy each one of them as they are growing up. I don't have to worry about missing any of those special moments or being there when they need me.

"Five years ago, I thought I had it all. I had completed my PhD in Engineering and was working as award-winning Senior Chemist for a leading company. It felt like my years of hard work were finally paying off.

It wasn’t long before I decided to retire my career as a chemist. I knew that by putting a larger focus on my Coaching business, I could enjoy a more flexible lifestyle and take on a larger role with raising my kids.

Being a Coach has changed everything for my family and me. It has given me the confidence, tools, and success to be both a provider for my family and a present father and husband.
