Shakeology Chocolate Brownie Snacks

Guess what... I LOVE Shakeology!! I know, BIG shocker, right?? Besides being jam packed with nutrients, one of the best things about it is how versatile it is which is awesome when you are trying to stick to a healthy diet (and don't look now but swimsuit season is right around the corner). I came across this recipe on the Shakeology blog recently that combines the health benefits of Shakeology and chocolate. Yes, CHOCOLATE!!

Chocolate Brownie Snacks
Makes 12 servings, 1 ball each
- Total Time: 1 hr. 10 min.
- Prep Time: 10 min.
- Cooking Time:  None

What you need:
- ½ cup  all-natural smooth almond butter
- 1 scoop Chocolate Vegan Shakeology
- 1  medium ripe banana, mashed
- ¼ cup  quick-cooking rolled oats
- 3 Tbsp. chopped raw almonds (or walnuts or sun flower seeds)

What you do:
1. Combine almond butter, Shakeology, banana, oats, and almonds in a medium bowl; mix well.
2. Roll mixture into twelve 1-inch balls; place in airtight container.
3. Refrigerate for at least 1 hour before serving.

Motivation Monday: Making Your BIG Goals

Happy Monday!! I hope you had a fantastic weekend. Spring Break here in Oregon has come and gone (sad face) but Spring has sprung! There is new life all around and I can't think of a better time to dedicate yourself to achieving your DREAM LIFE!! I love this quote: "If your dreams don't scare you they aren't BIG enough."

Last week I posted about stepping out of your comfort zone and discovering what is holding you back and BREAKING THROUGH it. What did you do last week to STOP WISHING and START DOING?? 

This post is about what I've learned how to break down being balanced and happy in your daily life that coincides with making BIG goals. It sounds a bit daunting but I'm here to tell you that you CAN DO IT!!

Italian Turkey Meatballs & Ginger Turkey Lettuce Wraps Recipes


The Rule of Doubles!! This is how I LIVE!!! I always use double ingredients and make two meals at once!!!! Click here to see my original post about the Rule of Doubles. Here are a couple of great recipes that are quick and easy AND healthy: Italian Turkey Meatballs 1 lb lean ground turkey 1/2 large onion finely chopped 2 cups fresh spinach finely chopped 2 eggs 1/2 cup feta cheese 1/2 cup Parmesan cheese 1/2 cup ground flax seed 1 tbsp garlic powder 1tbsp Italian seasoning *Mix it all together!! Roll into 1 " meatballs Brown on medium heat until cooked through (I melt coconut oil in my pan..you can also use olive oil) Top with feta cheese and marinara!! Eat!! or or cover and refrigerate till dinner (I prep mine in the morning) then bake for 10 minutes at 375 to warm when ready to eat!! or freeze for later in the week!!!!
At the same time....... Ginger turkey lettuce wraps 10 white mushrooms chopped 3/4 lb ground turkey 1/2 large onion finely chopped 2 tbsp liquid Aminos 1 tsp ground ginger 1 tsp garlic powder *cook in a skillet...making sure your turkey is broken into small pieces !!!! Warm when ready to eat!! Serve in lettuce leaves!! (Butter lettuce or romaine work best!!) *Top with green onions!! And even mandarin oranges!!!

From 5 Years Without Fitness to FABULOUS

Thursdays are one of my favorites because I get to brag about my INSPIRING team a little bit and focus on some of the success we've seen. Meet Meredith.. wife, mom of SIX, and 21 Day Fix graduate. Here is her story about how 21 Day Fix started her on her fitness path:

"5 YEARS! I had been exercise free for FIVE WHOLE YEARS! Wait...I probably shouldn't admit that to you, but it's true!

I know what it's like to be dismally out of shape.

I know what it's like to have knee pain and feel like I had no options....
I know what it's like to come to terms with getting older and being OK with aches and pains and weight gains.

That was me just 8 months ago. Every time I tried to exercise, my knee would swell and I couldn't walk for a week...so really, who could blame me for give up on exercise? Then it started creeping into everyday life. I was having a hard time performing daily tasks because of it. So that's when I thought....enough is enough! I started physical therapy. The exercises were simple...leg raises, wall squats...but something happened. Maybe it was a surge of endorphins that I haven't felt in 5 years, but I began feeling better. And that's when the beast awakened!

I started with my elliptical....level 1 for 15 minutes. That's all I could do. It was hard and I wanted to quit after every 30 seconds. But I pushed myself harder everyday until I could do 30 minutes. And it just progressed from there. I was able to lose around five pounds in two months, but I also gained energy and confidence. Both of which had been lacking for a while.

That's when I started Beachbody. I did the 21 Day Fix with Autumn Calabrese. It gave me direction, it gave me a meal plan, a meal replacement with Shakeology, a coach to help and encourage me, and a time frame. And after 21 days...I lost 10 pounds and 2-3 inches EVERYWHERE!!!! I've lost 10 more pounds since then with some other programs, but the 21 Day Fix will always have a special place in my heart. It was my kick start! All I had to do was follow the program!"

Huuummp Daaaaaay!!!

It's Wednesday! The week is half over!! How have your workouts gone this week? Even though it is Spring Break here in Oregon I'm still taking the time to get my sweat on!! Best part is it doesn't need to take much time out of your day. 

I am a big believer that small things can make a big difference. My Muscle Max Out Challenges focus on one muscle group at a time to give you a place to start with your fitness goals. And they best part it you can do it at your own pace and as many times as you can. Here is one of my favorite circuits:

Motivation Monday: What's Holding You Back??

Happy Monday!! I hope you had a fantastic weekend. Are you ready to get back at it and start making your DREAMS come true?!?!

Last week I posted about the importance of priorities and putting your own personal GROWTH and HAPPINESS first on your priority list. I hope you've had the chance to think about your list and rearrange it if you need to. 

This subject of this post is one of the best and worst because you will need to be extremely vulnerable with yourself. What is it in your life that is HOLDING YOU BACK? I know this isn't an easy thing to do but I also know how powerful discovering the answers can be!!

YOU Can Do It Too!!

Adventures In Tofu & Shakeology

If you've followed me on Facebook recently you've seen that I've been experimenting with tofu a bit. I recently came across this recipe that combines tofu and Shakeology that looks FABULOUS!!

Key Lime Shakeology Pie

2 scoops Greenberry Shakeology
1 container tofu, silken firm (approx. 12 oz.) 
Juice of 2 limes 
1 Tbsp. sugar-free lime Jell-O® mix
2 Tbsp. orange juice
2 1-1/4 oz. reduced fat cream cheese
1 pre-made whole-grain graham pie crust
Directions: Place tofu, Greenberry Shakeology, Jell-O, lime juice, cream cheese, and orange juice in blender; blend until smooth and creamy. Pour into pie crust and refrigerate until firm, at least 1 hour. (Makes 8 servings.)

Motivation Monday: Priorities

Happy Happy Monday everyone!!


Last week I shared a little bit about creating your DREAM LIFE and getting started on working toward your goals. And that's the key... to START!! 


As I've worked toward making my own dreams come true I've learned how important it is to PRIORITIZE. A problem that I've faced is having my priorities become out of balance. I completely left myself off my own priority list. Your list will probably look totally different from mine, and that's OK. What should be the same though is putting your own personal GROWTH and HAPPINESS first on that list.

We all have so much to do and so many little tasks to get done each day that it can make it easy to lose sight of our bigger goals. The next video in my 'Goal Diggers' series is about creating your priorities. Hope you enjoy it!!

This Is What Brings Me JOY

One of the things I love the most about being a Beachbody coach is seeing the moms on my team change their lives and start reaching their goals. Here is an AWESOME story from Team RockIt:

"Hey! I'm Shaylin, and I'm a 24 year old wife and mother! I have been married for 3 years to my perfect pair, and our 10 month old son is the cutest thing I've ever seen (biased mom opinion, maybe?!). My entire life up until a year ago was very unhealthy. Junk food was TOWERING in our garage when I was growing up, and most of our meals were very fatty.. Toast with a quarter stick of butter, tons of "cream of this" soups in our dinners, and we ALWAYS had snack foods until the minute we went to bed. I had issues with my body image all growing up, but I think it was because my mom did too, because looking back I was pretty "normal". 

When I left home after high school, I was really active and kept the weight at bay by going to dance parties and "slack lining". The foods I was eating consisted of 16 packs of old fashioned donuts (that I kept very stingily to myself), sugar cereal, candy, and Grandma Sycamore's white bread. I'm surprised my body didn't just fall to the ground and refuse to get back up!!! After I got married, I quit my job to focus on school, and I instantly gained at least 15 pounds in 2-3 months. Eh, big deal. Then another 5, and another, and then all of a sudden I didn't recognize myself. I turned very negative about everything, I would complain more often, and I was very irritable. To put it lightly, I was a terrible wife. I got pregnant a couple years into our marriage and people kept asking if I was eating healthier and I thought, "I've been eating this way my entire life, the baby will be fine!"

That all changed when he got here.. 5 weeks early, in the NICU for 2 weeks, and I just knew I HAD to be the best example for him that I could be. Three months after he was born, I found Beachbody! I ordered Shakeology and Focus T25 and FINALLY, for the first time in 23 years, paid attention to what I was eating and made healthier choices. I lost 7 pounds that first week, 12 in the first month, and then 4 months later, I was down 23 pounds. I was finally beginning to recognize myself again and my self confidence was sneaking back. I started reading personal development books which helped me to really focus on the positive things in my life, and everything has been on an upward path since then! I'm a happy wife and mom, I can run around with my son, I can play sports again, and I'm not worried about what others are thinking of me. I can almost out-workout my husband!! I have since completed a few other programs and am still working toward my goal, but I'm closer than I ever thought I could be! I am SO grateful for those who were placed in my pathway to help me find the better side of me again!"

Motivation Monday: Your DREAM Life

Happy Monday everyone!!

I love Mondays because it is a chance re-dedicate myself to my goals and make a plan to reach them.

So here is what I hope will be a little motivation to help kick-off your Monday.

You really don't need to be GREAT to start working on your goals and creating your DREAM life... all you need to do is start!!

I am proof that you CAN reach your dreams!! I never imaged life would take me where it has, but with a little bit of SWEAT and  TEARS and a lot of LOVE I have started to realize some of my dreams for my little family. An there is no better feeling!!!

Happy New DIAMOND Day!!

I love people. People are AMAZING. Especially THIS ONE!!!

Happy DIAMOND DAY to the AMAZING SUPER MOM Caitlin Little Bradley!! It was almost a year ago that she messaged me and said she wanted to be part of our team. Caitlin happens to be married to my cousin Mark. But we'd really only met ONCE!! 


THIS MAMA!!! She has 4 BUSY, strong willed children (just like me!!) She is also generally a quiet and SHY person. She is PROOF to me...that this business if FOR EVERYONE. She is SO PASSIONATE about FOOD and its ability to HEAL your body!! She is the QUEEN of gluten free everything, healthy kids friendly meals, and Shakeology!!! SHE JUST KNEW SHE HAD TO SHARE IT with everyone!!!
She is also a runner...and tiny!!! She told me her goals was to BUILD SOME MUSCLES....and SHE DID!! She is now a certified PIYO instructor...and stronger and faster than ever!!!! (I only wish we lived closer so we could run together!!)


She is just nothing SHORT of AMAZING. Her and her team have loved and lifted and WORKED so hard. Despite having a house FULL of sick kids and mountains of laundry this week...this girl was DETERMINED to SHINE.


She may be quiet...and sweet...but SHE HAS FIRE IN HER HEART...and she DRIVES WITH IT!!! I am so GRATEFUL to have you in my life CAITLIN!!! Team ROCKIT is so PROUD of you!!! Happy Shiny DIAMOND day!!!!

The Rule of DOUBLES!

Planning and creating meals when you are a BUSY MOM can seem DAUNTING.

Lets be honest...life with kids NEVER goes as planned!!   Dinner time always seems to creep up on me and then everyone is HUNGRY..tired...and WAITING for mom to figure out what to make is just NOT going to happen!!  So then you end up with frozen pizza or macaroni.. AGAIN.  Because its fast, easy...and you're just trying to maintain sanity!! You KNOW your kids will eat THAT!!  But..is it really healthy. NO.  Its not...but hey you are all still ALIVE.

Trust me....I have been there.  ALL THE TIME. Sometimes my kids still eat pizza and macaroni.

Once I started to shift to CLEAN EATING I found myself trying to figure out how to PLAN so that I didn't fall into the trap of being both TIRED and UNPREPARED....AND to find clean recipes my KIDS WOULD EAT!!!

Meet THE RULE OF DOUBLES!!!

The IDEA behind it is that YOU PREP DOUBLE the INGREDIENTS and you use those ingredients to build other meals during the week...So you DOUBLE up the USE!!  You SHOP ONCE, Prep DOUBLE and then USE DOUBLE.

Here is my MEAL PLAN for this Week!
It shows what I prepped....and then what I used!! Another trick is to prep the one or two things you need in the MORNING!  So if you need CHICKEN...bake it in the morning while you are getting your kids off to school! Or make your rice at lunch time while your kids are sitting eating lunch!!  THEN...when DINNER rolls around (and the meltdowns) all you have to do it throw it together.....


Here is the SHOPPING LIST 
(mine doesn't usually look this cute.....)
 


 Recipes:

Turkey Sweet Potato Chili

1 "box" organic Chicken Broth
1 can dark red Kidney beans (rinsed and drained)
1 can white beans
2 can diced organic tomatoes
1 can diced  green chilies
1/2 lb lean turkey
1 medium onion chopped
2-3 tbsp chili power (depending on how hot you like it)
1 tbsp garlic powder
1 1/2  cups chopped sweet potato (about 1 large sweet potato) 

Cook your turkey and onions together on the stove top and add to the  chili
Cook chili in crock pot on low for 6 hours

Top with shredded cheese and Greek Yogurt!!!  

*I cook my sweet potatoes in the oven first to make the taste sweeter...and then I add the extra bakes sweet potatoes to meals later in the week!!

Sweet Potato PREP 
WASH and dice 3-4 LARGE Sweet potatoes (1/4 inch pieces)
*I dont peel mine= more nutrients and fiber
Put 1 tbsp Coconut oil in a glass pan
Put in all the sweet potatoes
Bake at 350 for about 35 minutes till soft
Toss in melted coconut oil - sprinkle with sea salt
Put back in and BROIL for a few minutes to give them a ROASTED taste and make them a little crispy. (SO SO GOOD)


Turkey Ginger lettuce Wraps

1 lb lean ground turkey
1 medium onion-chopped
 10 finely chopped Large white Mushrooms
2 tbsp liquid aminos
1 tsp ginger

Sautee turkey and onions in liquid aminos on the stove top
add in mushrooms and cook till soft

 Secret Sauce!!!
1/4 cup spicy mustard
1/4 tsp siracha
3 tbsp honey (or stevia)

*Serve in lettuce cups



BBQ chicken bake

USE:
2 cups bre baked diced Chicken
2 cups pre-baked sweet potatoes

Melt 1/2 tbsp coconut oil in a glass pan
Layer 2 cups Diced Chicken pre baked Sweet potatoes,

Drizzle the top with BBQ sauce. ( a little goes a long way = less sugar) 

 Bake for 20 minutes at 350 then BROIL the last 3-5 minutes to make it  CRISPY on top.


PLAIN baked chicken PREP
1 tbsp Coconut oil in a glass pan
6 fresh or frozen chicken breasts
*Sprinkle with paprika

Bake at 350 for 40 minutes (or until done =) ) 


Florentine Chicken Toss

2 cups pre- prepped rice
1 can Diced tomatoes
2 cups raw spinach leaves
2 cups diced chicken
1 tbsp garlic powder
1 tsp oregano
 3/4 parmesan Cheese
Optional: pre-preped mushrooms

TOSS it all together in a large sauce pan
Simmer on the stove top for about 7 minutes until the spinach is cooked...and DONE!!!

Sprinkle with Parmesan cheese!!

 MR. Pizzas!!

We give them NAMES and FACES!!!
use pita bread to let your kids make their OWN MINI pizzas

PREP: 4 bell peppers
USE: leftover mushrooms

What you need!!
Pita Bread
Shredded cheese
 Marinara
 Bell peppers
Sliced olives
Diced mushrooms
(any other pizza topping)
.......And a sense of humor

Bake at 400 for about 15 minutes!!!



Chicken Fajita Roll ups

USE:  pre prepped chicken
           Pre prepped Peppers
   
2 cups diced chicken
1/2 Medium onion- sliced
2 large bell peppers -sliced
1/2 cup plain greek yogurt
1/2 cup shredded cheese
1 tbsp garlic powder
1 tbsp chili powder   

Saute chicken, medium onion, and bell peppers in 1 tbsp coconut oil.
Sprinkle with garlic powder, chili powder
Stir in cheese and Greek yogurt

Place mixture in warmed Corn tortillas!!
Roll them and secure with toothpicks
BROIL for 3-5 minutes on a cookie sheet till crispy
Flip and broil on the opposite side!!

*dip in greek yogurt mixed with salsa
*serve with black beans or leftover rice mixed with salsa


HEALTHY FRIED RICE!!!

This is SO EASY!!!  Its called... USING ALL YOUR LEFTOVERS!!  ANYTHING goes!!!

USE
Pre prepped Chicken
Pre prepped mushrooms
Pre prepped pepper

2 eggs
1 tbsp
1/4 tsp ginger
1 tsp garlic power

Other options:
Diced nitrate free ham
Chicken sausage
Peas
Baby corn
Broccoli
Spinach

melt coconut OIL in a large sauce pan
cook 2 eggs in the coconut oil- chop the egg into little peices
Add in in rice and veggies
Add liquid aminos

SERVE!!!

* I usually give my kids mandarin oranges on the side with this one


NOW...you have USED ALL YOUR INGREDIENTS with MINIMAL AMMOUNT of STRESS and WORK!!!

It's YOUR Dream





Last night I got REAL with myself.  A lot of BIG dreams of ours are starting to be right within reach.....

So I asked myself ...Are you REALLY living the life of your Dreams?!?

For a long time I didn't think I COULD. Goals and success was something I cheered for ...for everyone else.  I both felt Selfish wanting more...but I also didn't think I was capable of more.

Well God put a stop to that!!!  Sometimes God throws fire at you....and you learn to dodge it, then dance with it, then.... You internalize it!!

Out of struggle...burns strength!!

Working towards our big dreams as a family these past 5 years has been crazy..and hard...

I get so tired and busy...

So when I found myself saying this past week

"I wish I had more time to read the scriptures...and connect to God .."

And 
"I wish I could get back to running everyday..."

I realized....Wishes don't just COME TRUE....you gotta DO something!!

You're never going to have more hours in a day...

So if you  really want something....stop wishing and start DOING!!!

So....when I went to bed (late) last night I told my husband....

"I'm getting up early to RUN tomorrow dangit!!"

...set my alarm (so early)
....set out my clothes

And BAM....morning came like in 2 seconds!!! 

Well it was dark...very dark...and cold...and a little drizzly rainy ...

Well guess what?!!! Oregon ain't changing its Wheather any time soon!!!

So I laced up...downed my pre-workout...put on my reflective vest....and went running. (Feels so dang good!) 

Headphones in....filled my brain with scripture...had a good long Chat with God...

Came home and did my 21 day Fix Extreme Pliyo .....

And it's not even time to wake up the kids!!!!


Truth...  

If  YOU want something to change in your life...start Do-ing instead of Wishing!!

If you need a Miracle ...or you know it's gonna take one to make your dreams come true...

Ask God... Have Faith that it CAN happen....and get to work!!!!

......dreams take time. So trust that if you DO all YOU can do...God WILL move the mountain!!
